We are having our roof replaced and have open beam ceilings in the kitchen and living area. Are these covers good to protect against falling debris such as leaves, dirt, dust, etc? I don't expect heavy items to fall, just a lot of 30 year accumulated stuff.

The dust cover will only protect from minor moisture during a move or indoor storage. You may want to consider something a bit more heavy-duty such as a tarp instead.
